Pecan Cobbler

Ingredients:

  • 1 ½ cups self-rising flour
  • 1 ½ cups granulated sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 stick (½ cup) unsalted butter, melted
  • 1 ½ cups chopped pecans (or use halved for more crunch)
  • 1 ½ cups brown sugar, packed
  • 1 ½ cups hot water

 

Instructions:

  1. Preheat oven to 350°F.
  2. Pour melted butter into the bottom of a 9x13-inch baking dish. Do not stir.
  3. In a medium bowl, whisk together flour, sugar, milk, and vanilla until smooth. Pour the batter evenly over the butter—again, do not stir.
  4. Sprinkle chopped pecans evenly over the batter.
  5. Sprinkle brown sugar evenly over the top.
  6. Carefully pour hot water over the entire dish. (It will look unusual, but don’t mix—it creates the cobbler’s rich, gooey layer.)
  7. Bake uncovered for 45–50 minutes, or until the top is golden brown and bubbling.
  8. Let cool slightly before serving. The bottom will be thick and syrupy, like a pecan pie filling.
