Sweet Butternut Squash with Pecans and Brown Sugar

A sweet and savory side that will have everyone asking for more!

Roasted cubes of tender butternut squash are tossed with rich brown sugar, buttery pecans, and a hint of cinnamon for a sweet, nutty finish. It's the perfect balance of earthy, sweet, and crunchy—ideal for holiday tables or comforting weeknight dinners.


1 (12-16oz) bag Frozen Butternut Squash
2 tbsp Butter
2-3 tbsp Brown Sugar (adjust to taste)
1/4 tsp Cinnamon (optional but recommended) 
Pinch of Salt
1/2 cup Chopped Pecans (toasted for extra flavor)

Instructions:

  1. Steam or microwave frozen squash according to package until tender. Drain any excess water. 
  2. If you want a smooth texture, lightly mash the squash with a fork or potato masher. You can also leave them in chunks if you prefer. 
  3. In a pan over medium heat, melt butter. Stir in brown sugar, cinnamon, and salt. Let bubble for about 1 minute. 
  4. Add the cooked squash and pecans to the pan. Stir gently to coat everything in the buttery brown sugar mix. Heat through for another 2-3 minutes. 
  5. Garnish with a few extra pecans if you're feeling fancy! 
  6. Enjoy!
