Chocolate Pecan Gooey Brownies

Ingredients: 

Bottom Layer
1 box (18oz) Brownie Mix
1 Egg
½ cup Unsalted Butter, melted
Water (if needed)

Middle Layer
3 Eggs
⅓ cup Light Brown Sugar
¼ cup Sugar
1 cup Light Corn Syrup
¼ cup Salted Butter, melted
2 tsp Vanilla Extract
2 cups Medium Pecan Pieces

Top Layer
8 oz Cream Cheese
3 Eggs
1 ½ tsp Vanilla Extract
½ cup Unsalted Butter, melted and slightly cooled
3 ⅓ cup Powder Sugar

Instructions:

  1. Preheat the oven to 325F. Spray a 9x13 pan with nonstick cooking spray.
  2. Combine brownie mix, butter, and egg. Mixture should be thick. If the mixture is not coming together add 1 tbsp of water at a time until everything is mixed well, just make sure the mixture is still thick. Pat the mixture into the bottom of your 9x13 pan.
  3. To make the middle layer, combine eggs, sugar, brown sugar, corn syrup, vanilla, and butter in a mixing bowl, mixing until well blended. Stir in pecans and spread over the brownie layer in the 9x13 pan.
  4. For the top layer, combine the cream cheese, eggs, vanilla, and butter. Once combined, start adding in the powdered sugar. I added 1 cup at a time. Pour mixture over the top of the other two layers.  
  5. Bake for 55-75 minutes. Should be jiggly in the center but the top layer should be firm to the touch.
  6. Let cool. Sever and enjoy!
