These Cowboy Cookies are packed with all your favorite flavors—oats, chocolate, pecans, and coconut in every bite!
1 cup Unsalted Butter, browned
1 ½ cups Light Brown Sugar, packed
½ cup Sugar
1 Large Eggs, room temperature
1 Large Egg Yolk, room temperature
2 ½ tsp Vanilla Extract
2 ⅓ cup All Purpose Flour
1 tsp Baking Soda
1 tsp Cinnamon
½ tsp Salt
1 ¾ cup Old Fashioned Oats
¾ cup Sweetened Coconut Flakes
½ cup Small Chopped Pecan Pieces
12 oz Semi-Sweet Chocolate Chips
1 tsp Flakey Salt
Instructions:
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a bowl, whisk together browned butter, brown sugar, and sugar. Add in eggs, egg yolk, and vanilla extract, then whisk together until well combined.
- In a separate bowl, combine all dry ingredients (flour, baking soda, cinnamon, salt, old fashioned oats, coconut flakes, chopped pecan pieces, and chocolate chips).
- Fold dry ingredients into wet ingredients until just combined.
- Scoop out 2-inch balls of cookie dough and place on baking sheets with space in between.
- Bake for about 12 minutes or until cookies are light brown and set at the edges but soft in the middle.
- Add flakey salt and any extra toppings you would like, serve, and enjoy!
