Puff Pastry Pecan Pie Bites

Flaky, golden puff pastry meets the rich, gooey goodness of classic pecan pie in these irresistible bite-sized treats. Each one is filled with a buttery brown sugar-pecan mixture that bakes into a caramelized center, wrapped in crisp, airy layers. Perfect for holiday platters, parties, or anytime you’re craving a sweet, nutty indulgence—no fork required!

 

INGREDIENTS

  • 1 package Puff Pastry

  • 1 cup Chopped Pecan Pieces

  • ¼ tsp Salt

  • ½ cup Brown Sugar

  • 2 tbsp butter, melted

  • ⅛ cup Light Karo Syrup

  • 2 Eggs

 

INSTRUCTIONS

  1. Preheat the oven to 375F. Spray your muffin pan. 

  2. In a medium sized bowl, melt the butter and add in brown sugar, karo syrup, eggs, and salt. Mix well, then stir in your pecan pieces and set aside. 

  3. Unroll your puff pastry and cut into 12 or 24 evenly sized pieces. Note: depending on if you are using a regular or mini sized muffin pan. 

  4. Press the puff pastry into your muffin pan. Fill each pastry with filing. Note: you should be able to use all the filing.

  5. Bake for 15-18 minutes or until the pastry starts to turn a golden-brown color. 

  6. Remove from the oven and let cool. Serve and enjoy! Note: if the filing overflowed some while baking you may need to use a knife to help remove the pastry from the pan.
