Pecan Meal Granola Bars

1 ½ cups rolled oats
½ cup pecan meal (finely ground pecans)
½ cup natural peanut butter (creamy or crunchy)
⅓ cup honey (or maple syrup)
¼ cup mini chocolate chips
¼ tsp salt
½ tsp vanilla extract (optional)

Instructions:

  1. Prep the pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Mix wet ingredients: In a small saucepan over low heat (or in the microwave), gently warm the peanut butter and honey until smooth and pourable. Stir in vanilla extract if using.
  3. Combine dry ingredients: In a large bowl, mix together the oats, pecan meal, and salt.
  4. Combine and mix: Pour the peanut butter-honey mixture over the dry ingredients. Stir well until everything is evenly coated. Let the mixture cool slightly before folding in the chocolate chips (so they don’t melt too much).
  5. Press into pan: Transfer the mixture to the prepared pan and press it down very firmly into an even layer. Use the back of a spatula or the bottom of a glass to press.
  6. Chill and set: Refrigerate for at least 1–2 hours until firm. Once set, lift out of the pan and slice into bars.
  7. Store: Keep in an airtight container in the fridge for up to 1 week or freeze for longer storage.
