1 ½ cups rolled oats
½ cup pecan meal (finely ground pecans)
½ cup natural peanut butter (creamy or crunchy)
⅓ cup honey (or maple syrup)
¼ cup mini chocolate chips
¼ tsp salt
½ tsp vanilla extract (optional)
Instructions:
- Prep the pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Mix wet ingredients: In a small saucepan over low heat (or in the microwave), gently warm the peanut butter and honey until smooth and pourable. Stir in vanilla extract if using.
- Combine dry ingredients: In a large bowl, mix together the oats, pecan meal, and salt.
- Combine and mix: Pour the peanut butter-honey mixture over the dry ingredients. Stir well until everything is evenly coated. Let the mixture cool slightly before folding in the chocolate chips (so they don’t melt too much).
- Press into pan: Transfer the mixture to the prepared pan and press it down very firmly into an even layer. Use the back of a spatula or the bottom of a glass to press.
- Chill and set: Refrigerate for at least 1–2 hours until firm. Once set, lift out of the pan and slice into bars.
- Store: Keep in an airtight container in the fridge for up to 1 week or freeze for longer storage.
