Back to School Breakfast Bars

Each bite delivers nutty flavor, satisfying texture, and lasting energy—perfect for kids, parents, and anyone on the go. These bars are a delicious way to start the school day right!

 

Ingredients:

• 1 cup rolled oats
• 1/3 cup all-purpose flour
• 1 tsp cinnamon
• 1/2 tsp baking powder
• 1/4 cup melted butter (or sub melted coconut oil)
• 1 egg
• 1/3 cup peanut butter
• 1/3 cup light brown sugar
• 1/4 cup honey
• 1/2 cup milk chocolate chips
• 1/2 cup chopped pecans

Instructions:

  1.  Preheat oven to 350°F (175°C). Oil an 8x8 baking dish.
  2. In a large mixing bowl, add all ingredients: rolled oats, flour, cinnamon, baking powder, melted butter, egg, peanut butter, brown sugar, honey, chocolate chips, and pecans.
  3. Stir until everything is fully combined and evenly mixed.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Bake for 20–25 minutes, or until the top is lightly golden and set.
  6. Let cool completely before cutting into bars.
